Dolmeh (Stuffed Grape Leaves)

Ingredients - Stuffed Grape Leaves
~ 40 grape leaves
1 cup basmati rice
1 medium onion
1/3 cup yellow split pea, lapeh
1/3 cup lemon juice (or vinegar)
1/2 cup barberries, zereshk
1 tablespoon of brown sugar
1 tablespoon of pomegranate syrup
.75 - 1 lb ground beef
chopped herbs, sabzi. Mainly mint (parsley, cilantro, dil, leeks, dried tarragon)
s & p, turmeric
Instructions
1.) Giving enough time for the sugar to dissolve, mix up the sugar, lemon juice, pomegranate syrup and water
2.) Fry onions, then add meat. Once it is golden, add the water, s&p and turmeric. Let it cook until the water is absorbed. Set aside and allow to cool
3.) Bring split peas to a boil for 15 minutes, allow to cool
4.) Bring rice to a boil, allow to cool
5.) Mix meat, peas, rice, sabzi, zereshk
6.) Rinse grape leaves, removing the stems
7.) Add a tablespoon of mixture to grape leave, roll, repeat
8.) Add oil to pot, take extra grape leaves and line the pot, add the dolmeh in layers
9.) Pour the lemon mixture and oil over subsequent layers and the top
10.) Bring to a boil and put on medium-low for 2 hours.
