Ingredients - Indian Style Chicken Saag
2 lbs of chicken breast
2 bags of fresh baby spinach
2 tomatoes
6 garlic cloves
1 inch piece of fresh ginger
1 medium sized onion
1 bunch of shallots
1/2 package of chives
2 bay leaves
spices: cumin, turmeric, crushed red pepper flakes, fenugreek to taste, s&p
(optional) 1/2 teaspoon of garlic paste, 1/2 teaspoon of ginger paste
Instructions
1.) Clean chicken and dice, brown in a separate pan, season with s&p. Put aside.
2.) Sauté onions and shallots, then add garlic, chives, ginger. once sautéed add diced tomatoes
3.) Add spinach and season generously. Add 1/2 cup of water to the pan
4.) Take everything out of the pan once sautéed and pulse it in a blender ~30x. If you have too much solid mixture, then add more water
5.) Pour sauce in a pot over the chicken. Add bay leaves and (optional) garlic and ginger pastes. Stir and simmer/low for 30 minutes
** Best served over brown or basmati rice
