Green Rice (Sabzi Baranj)

Ingredients -

Basmati Rice (3 cups), rinse & cleaned

2 bunches of fresh dill

1 potato, slices onion

frozen peas, 12 oz

vegetable oil (such as avocado, not olive oil)

Spices - turmeric, cumin, salt



Instructions

1.) wash the rice until clear water runs though, soak the rice in filtered water with 3 tbsp of salt

2.) wash the dill, pat dry with paper towel and chop

3.) boil water in a pot, about 8 quart pot with 4 tbsp salt

4.) drain the soaking rice, add it to the boiling water, cook for 5 min, add the frozen peas

** don't overcook, should be al dente, then drain in a colander

5.) to a pot add oil to cover the bottom, add a slice of onion and let the onion and oil infuse a bit, then pout out half the oil to a small bowl

6.) add more oil if needed, then add turmeric and cumin

7.) sprinkle a bit of rice, then add slices potatoes

8.) on the side, in a big bowl, mix the rice & chopped dill so that the dill is evenly distributed

9.) place the rice over the potatoes and poke holes, try the back of a Teflon long spoon, so that the steam from the base of the pot can escape upward

10.) turn the flame on high until you see steam coming out of the holes you made, then lower to low/medium, add the oil mixture you saved over the rice evenly, and cook for another 30 minutes with the pot covered. Add a layer of paper towels draped under the pot cover to absorb any left over steam still coming out



Optional: Take one cup of the cooked rice, mix it with a tiny bit of saffron and boiling water. Decorate the rice with this yellow rice


**pro tip: clean and soak the rice for two hours in salted water, prior to cooking
