Ingredients - One chicken or hen
1 whole white onion pealed, potato, sliced carrots
half a can of chickpeas
lemu amani
spices: tumeric, cumin, salt, white pepper
Instructions
1.) Clean the chicken or hen, remove feathers if any
2.) Place the chicken in a pot, covering the chicken with water. It should only cover the chicken a little, because you don't want the taste of the soup too diluted
3.) Boil the water.. the surface of the water will produce a bit of a foam. Use a strainer and skim it out
4.) After a boil, reduce the flame to low and add the spices, vegetables and chickpeas for 1.5 hours
5.) In the final 10 minutes, wash and poke holes into the lemu amani and add to the soup
