Russian Vinaigrette

Ingredients - Beet Salad
3-4 small potatoes
3 large beets
1 large carrot
chopped onion
green peas
pickles
vinegar
olive oil
s&p
Instructions
1.) Boil the root vegetables, let them cool then peal and chop
2.) Chop onions
3.) Add vegetables, onions, pickles & peas
4.) Drizzle on the vinegar, oil and s&p
5.) Mix and allow time for flavors to marinate
