Sweet Glazed Roasted Cornish Hen

Ingredients - Sweet Glazed Roasted Cornish hen

2 tablespoons of coconut oil or EVOO

2 large, minced garlic cloves

Paprika, Thyme, Garlic powder, s&p

1 cup of sweet and sour duck sauce

Chopped fresh veggies (celery, red pepper, potatoes, onion, carrots, yams, tomatoes, crab apples, etc.)

Instructions

1.) Clean the hen: remove any insides & cut any left over feathers

2.) Mix the oil with the spices and use this to rub the whole outside of the hen, place in a Pyrex surrounded by the cut up veggies

3.) Put in pre-set 450 degrees oven, covered with aluminum foil, for 1 hour

4.) After one hour, flip the hen over

5.) Keep an eye on the oven but after another 40 minutes, paste the hen with the duck sauce for a final 20 minutes and uncover


** Keep covered in the aluminum foil to keep the moisture in, until ready to serve
