Sweet Potato and Black Bean Stew

Ingredients - Sweet Potato & Black Bean Stew
2 tablespoons of coconut oil
2 large, minced garlic cloves
1/2 large, diced red onion
1/2 teaspoon of ground coriander
1 heaping teaspoon of turmeric
1 pinch of red pepper flakes
1/2 teaspoon of paprika
2-3 large sweet potatoes, peeled and chopped
1 tablespoon of tomato paste or puree
800 grams of diced tomatoes (1 large can)
800 grams of black beans, drained (2 cans)
1 can of vegetable stock
2-3 handfuls of kale or spinach

Instructions
1.) Heat up the coconut oil, garlic, onion, s&p for a few minutes
2.) Add in all of the spices and mix. Now add in the potatoes and mix.
3.) Add the tomatoes, paste/puree, beans, stock and fresh pepper
4.) Bring pot to a boil and then reduce to a low heat for 20-25 minutes
5.) Add the spinach in and allow it to wilt, then turn the heat off.
Best served over a brown rice or quinoa.
